A delicious loaded baked potato topped with cheddar cheese, bacon, beef, sour cream, and green onions.

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1 cup diced cooked beef (such as steak or roast)
- 1 cup sour cream
- 1/2 cup chopped green onions
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry.
- Prick the potatoes several times with a fork. Rub each potato with butter and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender.
- Prepare the Toppings:
- While the potatoes are baking, cook the bacon until crispy. Drain and crumble.
- Cook the beef to your liking, then dice into small pieces.
- Chop the green onions and set aside.
- Assemble the Loaded Potatoes:
- Once the potatoes are done, let them cool slightly. Cut a slit in the top of each potato and fluff the insides with a fork.
- Add butter, a pinch of salt, and pepper to the fluffed potato interior.
- Add a generous amount of cheddar cheese, followed by the diced beef.
- Top with crumbled bacon.
- Garnish:
- Dollop sour cream on top of each potato.
- Sprinkle with chopped green onions.
Notes
- For an extra crispy potato skin, bake on a baking sheet instead of directly on the rack.
- Try adding other toppings like sautéed mushrooms, jalapeños, or caramelized onions for additional flavors.
- You can use different types of cheese, such as Monterey Jack or mozzarella, for a variation.
