Description

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 cup diced cooked beef (such as steak or roast)
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Wash and scrub the potatoes thoroughly. Pat them dry.
    • Prick the potatoes several times with a fork. Rub each potato with butter and sprinkle with salt.
    • Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender.
  2. Prepare the Toppings:
    • While the potatoes are baking, cook the bacon until crispy. Drain and crumble.
    • Cook the beef to your liking, then dice into small pieces.
    • Chop the green onions and set aside.
  3. Assemble the Loaded Potatoes:
    • Once the potatoes are done, let them cool slightly. Cut a slit in the top of each potato and fluff the insides with a fork.
    • Add butter, a pinch of salt, and pepper to the fluffed potato interior.
    • Add a generous amount of cheddar cheese, followed by the diced beef.
    • Top with crumbled bacon.
  4. Garnish:
    • Dollop sour cream on top of each potato.
    • Sprinkle with chopped green onions.

  • For an extra crispy potato skin, bake on a baking sheet instead of directly on the rack.
