Description

A hearty skillet dish featuring ground beef, sausage, and cabbage topped with cheese and Fritos for a crunchy finish.


Ingredients

  • 1 pound ground beef
  • 12 ounces beef sausage, sliced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 head green cabbage, chopped (about 6 cups)
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • 2 cups Fritos corn chips

Instructions

  1. Brown the meat a large, deep skillet over medium heat, cooking the ground beef and sliced beef sausage until browned and fully cooked. Break up the beef as it cooks. Drain excess grease if needed. Let the meat develop some golden color for flavor.
  2. Add the diced onion and cook for about 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds, just until fragrant.
  3. Stir in the chopped cabbage to the skillet. Stir well to combine everything and let it cook for 5–7 minutes, until it begins to soften.
  4. Add both cans of tomatoes, including their juices, and sprinkle in the chili powder, cumin, paprika, salt, and pepper. Reduce the heat to medium-low, cover, and let simmer for about 15–20 minutes, stirring occasionally, until the cabbage is tender.
  5. Add shredded cheddar evenly over the top. Cover for a few minutes until melted. Just before serving, scatter the Fritos over the dish for a crunch. Serve hot straight from the skillet.
