Instructions

  1. Prepare the Dough: In a medium saucepan, combine water, butter, and salt. Heat over medium heat until it comes to a boil. Reduce the heat to low and add the flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from the heat and let it cool for about 5 minutes. Add the eggs, one at a time, mixing well after each addition. You can use a hand mixer for easier mixing. If desired, add vanilla extract.
  2. Pipe the Churros: Transfer the dough to a piping bag fitted with a large star tip. Pipe 3-inch spirals onto a baking sheet lined with parchment paper. Leave some space between each spiral to expand during frying.
  3. Fry the Churros: Heat oil in a deep pan to 350°F (175°C). Fry the churro spirals in batches until golden brown and crispy, about 2-3 minutes per side. Remove from oil and drain on paper towels.
  4. Coat with Cinnamon Sugar: In a small bowl, mix the sugar and cinnamon. While the churros are still warm, toss them in the cinnamon sugar until fully coated.
  5. Assemble the Ice Cream Sandwiches: Once the churros are completely cooled, place a scoop of vanilla ice cream between two churro spirals. Press gently to form a sandwich.
