Description

Ingredients

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the cherry tomatoes and cucumber.
  2. Halve and pit the avocados, then scoop them into a large bowl.
  3. Dice the avocados into bite-sized pieces. Add halved cherry tomatoes, diced cucumber, and chopped red onion to the bowl.
