Description

Homemade crusty bread baked in a Dutch oven for a perfect crust and soft inside.


Ingredients

Scale
  • 3 cups (450g) flour, bread or all-purpose
  • 2 tsp instant or rapid rise yeast
  • 2 tsp cooking or kosher salt
  • 1 1/2 cups (375 ml) very warm water
  • 1 1/2 tbsp flour (for dusting)

Instructions

  1. In a large mixing bowl, combine flour, yeast, and salt.
  2. Add the warm water and stir until a shaggy dough forms.
  3. Cover the bowl and let the dough rise for 2-3 hours until doubled in volume.
  4. If desired, refrigerate the dough for up to 3 days for flavor development.
  5. Preheat the oven to 450°F (230°C) with the Dutch oven inside for 30 minutes.
  6. On a floured surface, shape the dough gently, then transfer it to a piece of parchment paper.
  7. Lower the dough into the hot Dutch oven and cover with a lid.
  8. Bake for 30 minutes covered, then remove the lid and bake for another 12 minutes until deep golden.
  9. Cool on a rack for 10 minutes before slicing.

Notes

  • For a crustier bread, avoid using too much dusting flour when shaping the dough.
  • Letting the dough rise in the refrigerator allows for deeper flavor development.
