A delicious combination of chocolate cake and creamy flan, topped with whipped cream and cherries.
Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- Cherries, for garnish
- Whipped cream, for topping
Instructions
- Prepare the Caramel: In a saucepan over medium heat, melt the sugar until it turns a golden brown. Pour the caramel into the bottom of a greased bundt pan.
- Prepare the Chocolate Cake Batter: Preheat the oven to 350°F (175°C). In a large bowl, sift together the flour, cocoa powder, baking soda, and salt. In another bowl, whisk together the melted butter, sugar, eggs, buttermilk, and vanilla extract. Gradually combine the wet ingredients with the dry ingredients, mixing until smooth. Pour this batter over the caramel in the bundt pan.
- Prepare the Flan Mixture: In a blender, combine sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth. Carefully pour the flan mixture over the chocolate cake batter in the bundt pan.
- Bake: Cover the bundt pan with aluminum foil. Place the bundt pan in a larger baking dish and fill the dish with hot water, reaching halfway up the sides of the bundt pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the cake to cool in the pan for 1 hour, then refrigerate for at least 4 hours or overnight. Invert onto a serving platter. Top with whipped cream and garnish with cherries.
Notes
- Make sure the caramel is evenly spread in the pan before adding the cake batter.
- To prevent overcooking, check the cake during the last 10 minutes of baking.
- Use room temperature ingredients for a smoother batter.
- To ensure a smooth flan, blend the mixture until completely incorporated.
