Description
A delicious and creamy vegan pasta dish made with silken tofu.

- 2½ cups (300g) all-purpose flour, plus more for dusting
- 10 oz (275g) silken tofu
- ¼ teaspoon salt
- Your favorite pasta sauce (marinara, garlic butter, pesto, etc.)
- Vegan parmesan (optional)
- Fresh herbs (optional)
Instructions
- Add the silken tofu to a high-speed blender and blend on high for 30-60 seconds until completely smooth and creamy with no lumps. You should have about 1 cup of smooth tofu puree.
- Transfer the blended tofu to a large mixing bowl. Add the flour and salt. Using a wooden spoon or your hands, mix together until a shaggy, rough dough forms.
- Transfer the shaggy dough to a clean work surface. Knead the dough for 3-4 minutes until it becomes smooth and elastic. If the dough feels too sticky, add 1-2 tablespoons of flour at a time until it’s workable but still soft. The dough should feel soft and slightly tacky.
- Shape the dough into a ball and place it back in the bowl. Cover with a damp kitchen towel or plastic wrap. Let it rest at room temperature for 15 minutes.
- While the dough rests, bring a large pot of salted water to a rolling boil.
- Once the dough has rested and the water is boiling, choose your method:
- Lightly flour a large baking sheet. Cut all the dough into bite-sized pieces and place them on the baking sheet. Toss with flour to prevent sticking. Add to boiling water in 2-3 batches.
- Boil the noodles for 3-4 minutes or until they float to the top and are tender. Use a slotted spoon to transfer cooked noodles to your prepared sauce.
- Add all cooked noodles to your prepared sauce in a large skillet. Toss gently over low heat for 1-2 minutes to coat evenly. Add pasta water if needed to loosen the sauce.
- Divide among bowls and garnish with vegan parmesan, fresh herbs, or a drizzle of olive oil. Serve immediately.
