Puff Pastry with Strawberries and Cream

Description

This delightful recipe features flaky puff pastry layered with creamy mascarpone and fresh strawberries, perfect for any occasion.


Ingredients

Scale
  • 2 sheets frozen puff pastry (thawed)
  • 2 tablespoons all purpose flour
  • 2 cups heavy whipping cream
  • 8 ounces mascarpone or cream cheese
  • 3/4 cup powdered sugar + more for dusting
  • 1 teaspoon vanilla extract
  • 1 pound strawberries (sliced)

Instructions

  1. Preheat oven to 400°.
  2. Remove one sheet puff pastry from packaging and place on a lightly floured surface. Cut with a pizza wheel or sharp knife into 6 rectangles. Place on a parchment lined baking sheet.
  3. Bake for 18-20 minutes or until golden brown.
  4. Cool on the pan and repeat with the other sheet of puff pastry.
  5. Meanwhile, make the pastry cream. Add heavy whipping cream to a large bowl and beat at medium speed with an electric mixer until it starts to thicken, raise to high speed, beating until stiff peaks form.
  6. Add mascarpone cheese or cream cheese, vanilla extract and powdered sugar to the bowl.
  7. Beat at medium speed until well combined. Cover and refrigerate until ready to assemble the pastries.
  8. When puff pastry has cooled, cut each pastry in half with a serrated knife.
  9. Spoon pastry cream onto the bottom half of each pastry and top with sliced strawberries.
  10. Place the tops of the puff pastry over the strawberries.
  11. Sprinkle powdered sugar over the tops with a mesh strainer if desired.
  12. Serve immediately or refrigerate, loosely covered with plastic wrap until ready to serve.

Notes

  • Make sure the puff pastry is fully thawed before using.
  • Strawberries can be replaced with other fruits based on seasonal availability.
