Description
Delicious and healthy crispy tofu rice bowls topped with edamame and avocado.
Ingredients

- 14 oz package extra firm tofu
- 2 tbsp cornstarch
- ½ cup soy sauce (or coconut aminos)
- 3 tbsp maple syrup
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 3 cloves minced garlic
- 1 tbsp grated ginger
- 3 cups cooked rice
- 2 cups steamed edamame
- 1 avocado
- Optional: sesame seeds and spring onions
Instructions
- Press and cube the tofu, then dust with cornstarch.
- Heat olive oil in a pan and sauté the tofu until crispy.
- In a bowl, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
- Pour the sauce over the crispy tofu and cook until thickened.
- Assemble bowls with rice, tofu, edamame, and avocado.
- Top with spring onions and sesame seeds, drizzling leftover sauce over the bowls.
Notes
- For extra flavor, consider marinating the tofu in the sauce before cooking.
