Description

Delicious and healthy crispy tofu rice bowls topped with edamame and avocado.


Ingredients

Scale
  • 14 oz package extra firm tofu
  • 2 tbsp cornstarch
  • ½ cup soy sauce (or coconut aminos)
  • 3 tbsp maple syrup
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 cloves minced garlic
  • 1 tbsp grated ginger
  • 3 cups cooked rice
  • 2 cups steamed edamame
  • 1 avocado
  • Optional: sesame seeds and spring onions

Instructions

  1. Press and cube the tofu, then dust with cornstarch.
  2. Heat olive oil in a pan and sauté the tofu until crispy.
  3. In a bowl, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
  4. Pour the sauce over the crispy tofu and cook until thickened.
  5. Assemble bowls with rice, tofu, edamame, and avocado.
  6. Top with spring onions and sesame seeds, drizzling leftover sauce over the bowls.

Notes

  • For extra flavor, consider marinating the tofu in the sauce before cooking.
