Roasted Sweet Potatoes and Smoked Sausage

Description

This hearty dish combines roasted sweet potatoes, smoked sausage, and colorful vegetables for a flavorful meal.


Ingredients

Scale
  • 2 medium sweet potatoes (peeled & cut into 1/2-inch chunks, about 4 cups)
  • 1 large red onion (cut into 1-inch chunks, about 2 cups)
  • 1 large red pepper (cut into 1-inch chunks, about 3/4 cup)
  • 13 to 14 ounces smoked sausage (sliced into coins)
  • 1/4 cup olive oil (divided)
  • 11/2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 13/4 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Mike’s Hot Honey (added to taste)
  • 1 jalapeño (thinly sliced, optional)
  • 2 ounces feta (optional)
  • 1 large avocado (diced, optional)
  • 1 lemon (cut into wedges, optional)
  • Crusty buttered bread (optional)

Instructions

  1. Place the oven rack in the middle position and preheat to 400°F.
  2. In a small bowl, stir together all seasonings.
  3. Add prepared sweet potatoes, peppers, and onion to the sheet pan. Drizzle with 2 tablespoons olive oil and sprinkle with about 3/4 of the seasoning mix (just eyeball it). Toss to coat evenly, then spread out so they don’t overlap. Roast for 20 minutes.
  4. Remove from oven. Add sliced sausage, remaining 2 tablespoons oil, and the rest of the seasoning. Toss to coat, then spread out again in a single layer. Roast for 15 minutes, until veggies are crisp-tender and sausage is browned. Toss once more and spread into a single layer.
  5. Drizzle about 1 tablespoon hot honey over everything. Broil (same rack position) for 2–4 minutes, watching closely, until nicely caramelized.
  6. Remove pan from oven and divide onto plates. Top with any combination of jalapeño, avocado, feta, extra drizzle of hot honey, and lemon wedges. Serve with some crusty bread to sop up all those extra pan juices.
