- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef (or turkey/chicken)
- 1 cup cooked rice
- 1 can (14 oz) diced tomatoes
- 1 medium onion, chopped
- 1 cup shredded mozzarella cheese

- 2 tsp Italian seasoning (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Cut the tops off each bell pepper and remove seeds.
- In a skillet over medium heat, sauté onions until translucent.
- Add ground meat and cook until browned.
- Stir in cooked rice and diced tomatoes; season with salt, pepper, and Italian seasoning.
- Mix until heated through.
- Generously stuff each pepper with the filling mixture.
- Place stuffed peppers upright in the baking dish, cover with foil, and bake for 25 minutes.
- Remove foil, sprinkle cheese on top, and bake an additional 10-15 minutes until bubbly.

- For a spicier kick, consider adding jalapeños to the filling.
