- 3 and 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round baking pans.
- In a large bowl, combine flour, cocoa, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes.
- Stir in boiling water until the mixture is smooth and thin.
- Divide batter evenly among prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Heat the heavy cream in a saucepan until it begins to simmer. Pour the hot cream over the chopped chocolate and add a pinch of salt. Let it sit for 5 minutes, then stir until smooth. Let cool to room temperature.
- Beat the butter on medium speed until creamy, about 2 minutes. Gradually add powdered sugar and cocoa powder, alternating with heavy cream. Add vanilla extract and beat until smooth and fluffy.
- Place the first cake layer on a serving platter. Spread a layer of ganache evenly over the top. Add the second cake layer, followed by more ganache. Repeat with the third layer. Frost the top and sides with chocolate frosting. Optionally, dust with cocoa or garnish with chocolate shavings.
Notes
- For a more decadent flavor, use dark chocolate for the ganache.
- Ensure the cakes are completely cool before frosting to prevent the frosting from melting.
- If the ganache becomes too firm, you can gently heat it to reach the desired consistency.
- For a moist cake, consider adding a touch of espresso to enhance the chocolate flavor without making it taste like coffee.
