Description

This rich New York style cheesecake features a smooth and creamy filling over a buttery graham cracker crust.

Ingredients

Scale
  • 4 cups cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • Pinch of salt
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the Crust:

    • Preheat your oven to 325°F (163°C).
    • In a medium bowl, mix graham cracker crumbs, melted butter, ¼ cup sugar, and a pinch of salt.
    • Press the mixture into the bottom of a 9-inch springform pan, ensuring it is even.
    • Bake the crust for 10 minutes, then remove and let cool.
  2. Prepare the Filling:

    • In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy.
    • Gradually add 1 ¼ cups sugar, continuing to mix until well combined.
    • Mix in the sour cream and vanilla extract. If using, add the lemon juice for a hint of tanginess.
    • Add the eggs, one at a time, mixing on low speed just until each is incorporated. Avoid overmixing.
  3. Assemble and Bake:

    • Pour the cream cheese mixture over the cooled crust in the springform pan.
    • Place the pan in a larger roasting pan and pour boiling water into the roasting pan until it comes halfway up the sides of the springform pan (water bath).
    • Carefully transfer to the preheated oven and bake for about 1 hour and 10 minutes, or until the edges are set and the center is slightly wobbly.
  4. Chill the Cheesecake:

    • Turn off the oven and open the door slightly. Leave the cheesecake in the oven for 1 hour to cool gradually.
    • Remove from the oven, cover with aluminum foil, and refrigerate for at least 4 hours or overnight before serving.

Notes

  • Ensure all ingredients are at room temperature for a smoother batter.
  • Avoid overbaking; the center should still jiggle a bit.
  • For a creamier texture, use full-fat cream cheese.
  • To prevent cracks, avoid opening the oven door frequently during baking.
  • Consider topping with fresh berries, fruit compote, or a drizzle of chocolate for added flavor.
