Instructions

  1. Heat the oil in a large pot over medium heat until shimmering and fragrant.
  2. Add the chopped onion and cook, stirring often, until translucent and soft—about 5 minutes. The onions should turn a light golden color and smell sweet and inviting.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant, filling your kitchen with a spicy, fresh aroma.
  4. Add the ground cumin, coriander, turmeric, and chili powder. Toast the spices for 30 seconds, until aromatic and slightly darker, which helps unlock their full flavor.
  5. Pour in the vegetable broth and bring the mixture to a gentle boil, stirring to combine all the flavors evenly.
  6. Add the rinsed red lentils to the boiling broth. Stir once, then reduce the heat to a simmer, keeping the pot partially covered.
