- 1 cup Brown Sugar (Coconut sugar can replace it for a healthier option.)
- 1/2 cup Pumpkin Puree (Applesauce can be a substitute with altered flavor.)
- 2 teaspoons Pumpkin Pie Spice (Ground cinnamon or a mix of spices can be used as an alternative.)
- 1 teaspoon Vanilla Extract (Consider almond extract for a nutty twist.)
- 1 cup Pecans (Swap with walnuts or almonds for different flavors.)
- 1 cup Dried Cranberries (Raisins or cherries can be used instead.)
Instructions
- Preheat your oven to 300°F (150°C).
- In a large mixing bowl, combine 3 cups of Rice Chex, 3 cups of Wheat Chex, 2 cups of pretzel sticks, 1 cup of pecans, and 1 cup of dried cranberries. Stir gently to evenly distribute.
- In a medium saucepan, melt 1 stick of unsalted butter over low heat. Once melted, whisk in 1 cup of brown sugar, 1/2 cup of pumpkin puree, 2 teaspoons of pumpkin pie spice, and 1 teaspoon of vanilla extract until smooth.
- Pour the warm pumpkin glaze over the Chex mix and gently fold it together using a rubber spatula.
- Spread the coated mixture evenly onto a parchment-lined baking sheet. Bake for 45 minutes, stirring every 15 minutes.
- Once golden-brown and aromatic, remove from the oven and allow to cool completely on the baking sheet.
- Once cooled, transfer the Pumpkin Spice Chex Mix to an airtight container for storing or serving.
