Description

Ingredients

  • 3 tbsp white miso paste
  • 2 tbsp extra virgin olive oil
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp pure maple syrup
  • 2 tbsp toasted sesame seeds (for garnish)
  • 2 green onions, thinly sliced (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine miso paste, olive oil, soy sauce, and maple syrup until smooth.
  3. Toss sweet potato cubes in the miso glaze until evenly coated.
  4. Spread the coated sweet potatoes on the baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  5. Serve warm in bowls topped with toasted sesame seeds and sliced green onions.
