Description

Ingredients

  • ½ cup unsalted butter (room temperature)
  • 2 large eggs
  • Zest of 1 lemon
  • ¼ cup lemon juice (freshly squeezed)
  • ¼ cup milk
  • 1 cup powdered sugar (for icing)
  • 2 tbsp lemon juice (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, followed by lemon zest and juice, mixing well.
  5. Gradually combine dry ingredients with wet ingredients while alternating with milk until just mixed.
  6. Pour batter into prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
  7. For the icing, mix powdered sugar with lemon juice until smooth and pourable.
  8. Once the cake has cooled, drizzle with icing before serving.
