Description

Delicious cream cheese filled ginger cookies that are perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  3. In a large mixing bowl, beat butter and brown sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. In another bowl, mix cream cheese and powdered sugar until smooth.
  6. Scoop cookie dough onto baking sheets; create an indentation in each scoop, fill with cream cheese mixture, and seal with more dough.
  7. Bake for 10-12 minutes until lightly golden around edges. Cool on wire racks.
