Description

Delicious avocado banana muffins that are healthy and easy to make.


Ingredients

  • 23 ripe bananas, mashed
  • 1 ripe avocado, mashed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the bananas until smooth and set aside.
  3. In another bowl, mash the avocado until creamy, then mix in the mashed bananas, sugar, eggs, and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gently fold the dry mixture into the wet mixture until just combined; do not overmix.
  6. Stir in the chocolate chips and fill each muffin cup about two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
