Delicious avocado banana muffins that are healthy and easy to make.
Ingredients

- 2–3 ripe bananas, mashed
- 1 ripe avocado, mashed
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 cup all-purpose flour
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mash the bananas until smooth and set aside.
- In another bowl, mash the avocado until creamy, then mix in the mashed bananas, sugar, eggs, and vanilla extract until combined.
- In a separate bowl, whisk together the flour and baking powder.
- Gently fold the dry mixture into the wet mixture until just combined; do not overmix.
- Stir in the chocolate chips and fill each muffin cup about two-thirds full.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
Notes
- For best results, let the muffins cool in the pan for a few minutes before transferring to a wire rack.
- Store in an airtight container to keep them fresh.
