Description

Ingredients

  • 2 cups parsnips, peeled and chopped (about 300g)
  • 2 cups sweet potatoes, peeled and chopped (about 300g)
  • 3 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp fresh thyme (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel and chop the parsnips and sweet potatoes into uniform 1-inch chunks.
  3. In a large bowl, combine the chopped veggies with honey, olive oil, salt, pepper, and thyme. Toss until well coated.
  4. Spread the mixture evenly on a parchment-lined baking sheet.
  5. Roast for 25-30 minutes until tender and golden brown, stirring halfway through cooking.
  6. Serve warm, optionally drizzled with extra honey.
