A delicious roasted vegetable dish combining parsnips and sweet potatoes, perfect as a side.

- 2 cups parsnips, peeled and chopped (about 300g)
- 2 cups sweet potatoes, peeled and chopped (about 300g)
- 3 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Peel and chop the parsnips and sweet potatoes into uniform 1-inch chunks.
- In a large bowl, combine the chopped veggies with honey, olive oil, salt, pepper, and thyme. Toss until well coated.
- Spread the mixture evenly on a parchment-lined baking sheet.
- Roast for 25-30 minutes until tender and golden brown, stirring halfway through cooking.
- Serve warm, optionally drizzled with extra honey.
