Description

Delicious cookies filled with colorful gumdrops, perfect for a sweet treat!


Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup sugar
  • ½ cup brown sugar (packed)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup chopped gumdrops
  • 2 tbsp all-purpose flour (to toss the gumdrops)

Instructions

  1. Preheat the oven to 350°F. Line baking sheets with parchment paper.
  2. In a large bowl, beat the butter, sugar, and brown sugar with an electric mixer until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Toss the gumdrops with 2 tablespoons of flour to keep them from sticking together. Gently fold into the dough.
  6. Scoop rounded tablespoonfuls of dough and place on the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
