- 1 pound ground beef (80/20)
- 1/2 cup corn meal
- 1/4 cup chicken broth
- 3 tbsp gluten-free Worcestershire sauce
- 2 tbsp ranch seasoning
- 2 tbsp chopped pepperoncini
- 1 whole egg
- 4 tbsp butter
- 4 whole pepperoncini
Instructions
- Preheat the oven to 350°F.
- Lightly grease an 8-inch cake pan and set aside.
- In a large mixing bowl, combine the ground beef, corn meal, chicken broth, Worcestershire sauce, ranch seasoning, chopped pepperoncini, and egg.
- Mix until all ingredients are well combined.
- Shape into a meatloaf and place in the cake pan.
- Top the meatloaf with the sliced butter and whole pepperoncini.
- Bake at 350°F or until the internal temperature reaches at least 165°F.
- Let the meatloaf rest for 5 minutes before serving.
Notes
- For added flavor, consider using homemade Worcestershire sauce.
- This meatloaf can be frozen for up to 3 months before baking.
