- 397 g Condensed milk (Adds creamy texture.)
- 300 g Milk chocolate (Extra layer of sweetness.)
- 2 tsp Ground ginger for chocolate (Enriches chocolate with spice.)
Instructions
- Preheat the oven to 180ºC (160ºC fan) and line a 9×9 inch square tin with parchment paper.
- Cream together the unsalted butter and caster sugar until smooth.
- Gently fold in the plain flour, ground ginger, ground cinnamon, nutmeg, and allspice until a cohesive dough forms.
- Press the dough into the prepared tin evenly and flatten the surface.
- Bake for 20-25 minutes, or until the top turns pale golden. Let it cool completely in the tin.
- For the caramel, combine condensed milk, unsalted butter, caster sugar, and golden syrup in a saucepan over low-medium heat. Stir until sugar dissolves and then raise the heat.
- Allow the mixture to boil for 5-7 minutes, stirring frequently, until it thickens and turns a darker golden.
- Pour the warm caramel over the cooled shortbread base and chill in the fridge for about 1 hour.
- Melt the milk chocolate until smooth, stirring in the ground ginger, then pour over the set caramel.
- Top with crushed gingerbread men and chill for 1-2 hours until set. Cut into squares.
