Description

A delicious layered treat combining a buttery shortbread base, rich caramel, and chocolate, topped with crushed gingerbread men.


Ingredients

  • 3 tbsp Caster sugar (Sweetens the caramel.)
  • 4 tbsp Golden syrup (Prevents sugar crystallization.)
  • 397 g Condensed milk (Adds creamy texture.)
  • 300 g Milk chocolate (Extra layer of sweetness.)
  • 2 tsp Ground ginger for chocolate (Enriches chocolate with spice.)

Instructions

  1. Preheat the oven to 180ºC (160ºC fan) and line a 9×9 inch square tin with parchment paper.
  2. Cream together the unsalted butter and caster sugar until smooth.
  3. Gently fold in the plain flour, ground ginger, ground cinnamon, nutmeg, and allspice until a cohesive dough forms.
  4. Press the dough into the prepared tin evenly and flatten the surface.
  5. Bake for 20-25 minutes, or until the top turns pale golden. Let it cool completely in the tin.
  6. For the caramel, combine condensed milk, unsalted butter, caster sugar, and golden syrup in a saucepan over low-medium heat. Stir until sugar dissolves and then raise the heat.
  7. Allow the mixture to boil for 5-7 minutes, stirring frequently, until it thickens and turns a darker golden.
  8. Pour the warm caramel over the cooled shortbread base and chill in the fridge for about 1 hour.
  9. Melt the milk chocolate until smooth, stirring in the ground ginger, then pour over the set caramel.
  10. Top with crushed gingerbread men and chill for 1-2 hours until set. Cut into squares.

Notes
