- 250g cream cheese
- 50g unsalted butter
- 100ml whole milk
- 6 egg yolks
- 60g cake flour
- 20g cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 6 egg whites
- 150g granulated sugar
- a pinch salt
Instructions
- Preheat and Prep: Preheat the oven to 320°F (160°C). Line a 9-inch round cake pan with parchment paper. Wrap the outside of the pan with foil to prevent water from seeping in.
- Melt Ingredients: In a heatproof bowl, melt the cream cheese, butter, and milk over a double boiler. Stir until smooth and completely combined. Allow to cool.
- Mix Dry Ingredients: Sift together cake flour and cornstarch in a separate bowl.
- Combine Wet Ingredients: Add egg yolks, lemon juice, and vanilla extract to the cooled cream cheese mixture. Whisk until smooth. Gradually add the sifted flour mixture and mix until combined.
- Beat Egg Whites: In a clean, dry bowl, beat egg whites with a pinch of salt until foamy. Gradually add sugar, continuing to beat until stiff peaks form.
- Fold and Combine: Gently fold the egg white mixture into the cream cheese mixture in thirds. Be careful not to deflate the egg whites.
- Prepare Water Bath: Pour the batter into the prepared pan. Place the pan inside a larger baking dish and fill the outer dish with hot water halfway up the sides of the cake pan.
- Bake: Bake in the preheated oven for about 60 minutes, then reduce the temperature to 300°F (150°C) and bake for an additional 30 minutes, or until the cake is golden brown and set.
- Cool: Once baked, turn off the oven and leave the cake inside with the door slightly open to cool gradually. This prevents cracking.
