Description

Ingredients

  • 50g unsalted butter
  • 100ml whole milk
  • 6 egg yolks
  • 60g cake flour
  • 20g cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 6 egg whites
  • 150g granulated sugar
  • a pinch salt

Instructions

  1. Preheat and Prep: Preheat the oven to 320°F (160°C). Line a 9-inch round cake pan with parchment paper. Wrap the outside of the pan with foil to prevent water from seeping in.
  2. Melt Ingredients: In a heatproof bowl, melt the cream cheese, butter, and milk over a double boiler. Stir until smooth and completely combined. Allow to cool.
  3. Mix Dry Ingredients: Sift together cake flour and cornstarch in a separate bowl.
  4. Combine Wet Ingredients: Add egg yolks, lemon juice, and vanilla extract to the cooled cream cheese mixture. Whisk until smooth. Gradually add the sifted flour mixture and mix until combined.
  5. Beat Egg Whites: In a clean, dry bowl, beat egg whites with a pinch of salt until foamy. Gradually add sugar, continuing to beat until stiff peaks form.
  6. Fold and Combine: Gently fold the egg white mixture into the cream cheese mixture in thirds. Be careful not to deflate the egg whites.
  7. Prepare Water Bath: Pour the batter into the prepared pan. Place the pan inside a larger baking dish and fill the outer dish with hot water halfway up the sides of the cake pan.
  8. Bake: Bake in the preheated oven for about 60 minutes, then reduce the temperature to 300°F (150°C) and bake for an additional 30 minutes, or until the cake is golden brown and set.
  9. Cool: Once baked, turn off the oven and leave the cake inside with the door slightly open to cool gradually. This prevents cracking.
