Description
A fragrant and delicious saffron-infused basmati rice dish, perfect as a side or main course.
Ingredients

- 1 cup basmati rice
- 1/2 tbsp extra virgin olive oil
- 2 cups water (can substitute chicken broth for a richer taste)
- 1/8 tsp saffron threads (ground into a powder using a mortar and pestle)
- 3/4 tsp salt
- cilantro (for garnish if desired)
Instructions
- Add the saffron threads to a mortar and pestle, and grind the saffron into a powder.
- Heat your stove to medium and add the extra virgin olive oil to a large pot. Once the oil is hot, add the rice followed by the saffron powder, and stir for 1 minute, being sure to coat each grain of rice with the oil.
- Add the water and salt, and bring to the boil on medium-high heat. Once boiling, turn your heat down to the low setting on your stove, cover, and cook undisturbed for 20 minutes.
- After 20 minutes, remove from the heat, and allow to rest (covered) for about 10 minutes.
- Fluff with a fork, and then add the rice to a serving dish, garnishing with some finely chopped cilantro if desired.
Notes
- For a richer flavor, use chicken broth instead of water.
- Make sure to not remove the lid while the rice is cooking to ensure it cooks evenly.
