Saffron Basmati Rice

Description

A fragrant and delicious saffron-infused basmati rice dish, perfect as a side or main course.


Ingredients

Scale
  • 1 cup basmati rice
  • 1/2 tbsp extra virgin olive oil
  • 2 cups water (can substitute chicken broth for a richer taste)
  • 1/8 tsp saffron threads (ground into a powder using a mortar and pestle)
  • 3/4 tsp salt
  • cilantro (for garnish if desired)

Instructions

  1. Add the saffron threads to a mortar and pestle, and grind the saffron into a powder.
  2. Heat your stove to medium and add the extra virgin olive oil to a large pot. Once the oil is hot, add the rice followed by the saffron powder, and stir for 1 minute, being sure to coat each grain of rice with the oil.
  3. Add the water and salt, and bring to the boil on medium-high heat. Once boiling, turn your heat down to the low setting on your stove, cover, and cook undisturbed for 20 minutes.
  4. After 20 minutes, remove from the heat, and allow to rest (covered) for about 10 minutes.
  5. Fluff with a fork, and then add the rice to a serving dish, garnishing with some finely chopped cilantro if desired.

Notes

  • For a richer flavor, use chicken broth instead of water.
  • Make sure to not remove the lid while the rice is cooking to ensure it cooks evenly.
