Description

A delicious blueberry compote made with fresh or frozen blueberries, perfect for desserts or breakfast.


Ingredients

Scale
  • 2 cups (300g) blueberries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 tsp cornstarch (optional)

Instructions

  1. Add the blueberries, sugar, lemon juice, and water to a pot, stir, and bring to the boil. Allow it to boil for about 5 minutes, stirring often to stop it from scorching.
  2. Reduce the heat to low and let it simmer and thicken for 10 minutes. It will thicken further as it cools.
  3. If necessary, stir 1 tsp cornstarch into 1 tsp water, add it to the blueberry compote, and cook for a further minute.
  4. Serve warm or allow to cool and store in a sterilised jar in the fridge for up to 5 days (or freeze for up to 2 months).

  • This compote can be used as a topping for pancakes, waffles, or yogurt.
