Description
Delicious nutty cookies filled with vibrant jelly, perfect for any occasion.
Ingredients
Scale
- ½ cup unsalted butter (softened)
- ¼ cup light brown sugar (adds caramel sweetness)
- 1 large egg (binds the mixture)
- ½ teaspoon almond extract (infuses nutty aroma)
- 1 cup all-purpose flour (provides structure)
- ¼ teaspoon kosher salt (balances flavors)
- 1 cup chopped peanuts (adds crunch)
- 3 tablespoons red jelly (strawberry or raspberry works)
- 3 tablespoons green jelly (green apple or mint jelly)
Instructions
- In a large mixing bowl, combine the softened butter, light brown sugar, egg yolk, and almond extract. Mix until creamy and smooth.
- Gradually add the flour and kosher salt until well incorporated. Shape the dough into 1-inch balls for even baking.
- In a separate small bowl, whisk the egg white until frothy. This will help the nuts adhere nicely to the cookies, enhancing their crunchiness.
- Dip each dough ball into the egg white then roll in the chopped peanuts, gently pressing to ensure they stick.
- Place the coated balls on a parchment paper-lined baking sheet for easy cleanup.
- Using your thumb, gently press the center of each cookie to create a small indent. This is where the colorful jelly will be added later.
- Spoon about a teaspoon of your chosen jelly into each indent, filling them just to the brim.
- Preheat your oven to 350°F and bake for 12-14 minutes.
- Allow them to cool completely on a wire rack before enjoying.
Notes
- For best results, ensure butter is at room temperature before mixing.
- You can use any flavor of jelly you prefer for variety.
