Description

Deliciously stacked pancake bites with sausage and cheese for a perfect breakfast or snack!


Ingredients

  • 1 pound breakfast sausage (beef, turkey, or plant-based)
  • 1 cup pancake mix (or homemade with flour, baking powder, sugar, and milk)
  • 1/2 cup maple syrup (or sugar-free alternative)
  • 2 eggs (or egg whites or flaxseed mixture for vegan option)
  • 4 slices cheddar or American cheese (or dairy-free cheese)

Instructions

  1. Prepare the sausage: Start by cooking the beef sausage patties in a skillet over medium heat until they are golden brown on both sides and fully cooked through. This should take about 4-5 minutes per side. Remove from the skillet and let them cool slightly.
  2. Make the pancake batter: While the sausage is cooking, prepare your pancake batter according to the package instructions or your homemade recipe. Make sure it’s well mixed and free of lumps.
  3. Preheat the pan: In the same skillet, wipe it clean and reduce the heat to low. Add a bit of butter or oil to prevent sticking.
  4. Cook the pancakes: Pour a small amount of pancake batter into the skillet, just enough to form a small pancake. Cook for about 2 minutes or until bubbles form on the surface. Flip and cook for another 1-2 minutes until golden brown. Repeat this process until you have several mini pancakes.
  5. Assemble the bites: For each Mcgriddle Bite, stack one pancake, place a sausage patty on top, add a slice of cheese, drizzle with maple syrup, and finally, top with another pancake. Press down gently to hold everything together.
  6. Finish cooking: If desired, you can place the assembled bites back in the skillet for a minute on each side to melt the cheese and warm everything through.
