Description

Delicious and healthy sweet potato tacos that are perfect for any meal.


Ingredients

  • 2 medium sweet potatoes (about 300g), peeled and cubed
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 4 corn or whole wheat tortillas
  • 1 ripe avocado, sliced
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes with olive oil, cumin, salt, and pepper. Spread evenly on the baking sheet and roast for 20-25 minutes until tender.
  3. While the sweet potatoes roast, heat the black beans in a saucepan over medium heat with garlic powder and lime juice.
  4. Warm tortillas in a dry skillet until pliable.
  5. Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, avocado slices, and an extra squeeze of lime juice.
  6. Serve immediately with salsa or pico de gallo.
