Ingredients

- 2 medium sweet potatoes (about 300g), peeled and cubed
- 1 can (15 oz) low-sodium black beans, drained and rinsed
- 4 corn or whole wheat tortillas
- 1 ripe avocado, sliced
- Juice of 1 lime
- 2 tbsp olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the cubed sweet potatoes with olive oil, cumin, salt, and pepper. Spread evenly on the baking sheet and roast for 20-25 minutes until tender.
- While the sweet potatoes roast, heat the black beans in a saucepan over medium heat with garlic powder and lime juice.
- Warm tortillas in a dry skillet until pliable.
- Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, avocado slices, and an extra squeeze of lime juice.
- Serve immediately with salsa or pico de gallo.
