This delicious Maple Dijon Chicken with Butternut Squash is a perfect comfort food for any occasion.

- 3 boneless skinless chicken breasts
- 3 cups cubed butternut squash
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 3 cloves garlic minced
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 4 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the chicken breasts with salt and pepper. Optional: sear in olive oil until golden on both sides.
- Peel and cube the butternut squash into 1-inch pieces and place them in the bottom of the crockpot.
- In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, and chicken broth.
- Place the chicken on top of the squash and pour the maple Dijon sauce over everything.
- Add fresh thyme sprigs on top for flavor.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
- Remove thyme sprigs and serve with sauce spooned over the chicken and squash.
Notes
- This dish pairs well with a green salad or steamed vegetables.
- For a spicier kick, consider adding a pinch of cayenne pepper to the sauce.
