Delicious black bean tacos perfect for a quick meal.
Ingredients

- 1 can black beans, rinsed and drained
- 1 tsp cumin
- 1 tsp chili powder
- to taste Salt and pepper
- 8 corn tortillas
- 1 cup shredded pepper jack cheese (or vegan cheese)
- 2 tbsp vegetable oil
Instructions
- Preheat your oven to 400°F (200°C).
- Mash black beans in a bowl until mostly smooth, then mix in cumin, chili powder, salt, and pepper.
- Spoon black bean filling onto half of each corn tortilla and sprinkle with cheese.
- Fold each tortilla to form a taco.
- Place tacos on a baking sheet with space between them.
- Brush the tops lightly with vegetable oil.
- Bake for 20 minutes, flipping halfway, until crispy and golden brown.
- Serve warm and enjoy with toppings of your choice.
