Ingredients

  • 4 fillets salmon, skinless and boneless (about 6 oz each)
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Filling:
    1. Heat olive oil in a pan over medium heat.
    2. Add minced garlic and sauté until fragrant, about 1 minute.
    3. Add spinach and cook until wilted. Remove from heat.
    4. In a bowl, mix the cooked spinach, cream cheese, Parmesan cheese, and lemon zest. Season with salt and pepper.
  3. Stuff Salmon:
    1. Lay each salmon fillet flat and spread an even layer of the spinach and cheese mixture on top.
    2. Roll each fillet tightly from one end to the other, securing with a toothpick if necessary.
  4. Bake:
    1. Place the salmon rolls in a baking dish and season with salt, pepper, and a drizzle of olive oil.
    2. Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
