- 4 fillets salmon, skinless and boneless (about 6 oz each)
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Filling:
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add spinach and cook until wilted. Remove from heat.
- In a bowl, mix the cooked spinach, cream cheese, Parmesan cheese, and lemon zest. Season with salt and pepper.
- Stuff Salmon:
- Lay each salmon fillet flat and spread an even layer of the spinach and cheese mixture on top.
- Roll each fillet tightly from one end to the other, securing with a toothpick if necessary.
- Bake:
- Place the salmon rolls in a baking dish and season with salt, pepper, and a drizzle of olive oil.
- Bake in the preheated oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.
- Serve:
- Remove toothpicks if used.
- Garnish with fresh dill or parsley if desired.
- Serve immediately while warm.
