- 2 tbsp olive oil
- 1 large onion, finely diced
- 2 carrots, finely diced
- 2 cloves garlic, minced
- 500 g ground beef
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- Salt and black pepper to taste
- 1 cup frozen peas
- For the mashed topping:
- 800 g potatoes, peeled and chopped
- 4 tbsp butter
- 1/4 cup milk
- Salt to taste
Instructions
- Start by heating olive oil in a large pan over medium heat. As the oil warms, add the diced onions and carrots. Let them cook slowly, stirring occasionally, until they soften and release a gentle sweetness.
- Add the garlic and cook briefly, just until fragrant. Then increase the heat slightly and add the ground beef. Break it apart with a spoon and let it brown evenly.
- Stir in the tomato paste, letting it cook for a minute to deepen its richness. Pour in the beef broth, then add thyme and rosemary. Season with salt and pepper. Let the mixture simmer gently until it thickens into a rich, hearty filling. Fold in the peas at the end for a pop of color and sweetness.
- Meanwhile, boil the potatoes in salted water until tender. Drain them well, then mash with butter and milk until smooth and creamy. Season to taste.
- Transfer the beef mixture into a baking dish, spreading it evenly. Spoon the mashed potatoes on top, smoothing them out with a fork.
- Bake in a preheated oven at 200°C (400°F) for about 20–25 minutes, until the top is golden and slightly crisp.
Notes
- This dish is best served hot and can be stored in the refrigerator for up to 3 days.
- For extra flavor, consider adding some Worcestershire sauce to the meat mixture.
