A light and fluffy dessert made with whipped topping, crushed pineapple, and marshmallows, perfect for gatherings!

- 1 (8 oz) container frozen whipped topping, thawed
- 1 (20 oz) can crushed pineapple in juice, drained well
- 1 (3 oz) box instant vanilla pudding mix
- 1 cup mini marshmallows
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped pecans or walnuts
- 1/4 cup sliced maraschino cherries, plus extra for garnish (optional)
Instructions
- In a fine-mesh strainer set over a bowl, drain the crushed pineapple very well, pressing gently with the back of a spoon to remove excess juice.
- Transfer the drained pineapple to a large mixing bowl and sprinkle the instant vanilla pudding mix over the top. Stir until the pineapple and pudding are thoroughly combined and slightly thickened.
- Add the thawed whipped topping to the bowl and gently fold it into the pineapple-pudding mixture using a spatula, keeping the mixture light and fluffy.
- Fold in the mini marshmallows, shredded coconut, and chopped pecans or walnuts until the mix-ins are evenly distributed. Gently fold in the sliced maraschino cherries, if using.
- Cover the bowl tightly with plastic wrap or transfer the mixture to an airtight container and refrigerate for at least 2 hours, or until well chilled and set.
- Before serving, give the fluff a gentle stir, spoon it into a serving bowl or individual cups, and garnish with extra whipped topping, coconut, nuts, and maraschino cherries if desired. Serve cold.
