Description

A light and fluffy dessert made with whipped topping, crushed pineapple, and marshmallows, perfect for gatherings!


Ingredients

  • 1 (8 oz) container frozen whipped topping, thawed
  • 1 (20 oz) can crushed pineapple in juice, drained well
  • 1 (3 oz) box instant vanilla pudding mix
  • 1 cup mini marshmallows
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup sliced maraschino cherries, plus extra for garnish (optional)

Instructions

  1. In a fine-mesh strainer set over a bowl, drain the crushed pineapple very well, pressing gently with the back of a spoon to remove excess juice.
  2. Transfer the drained pineapple to a large mixing bowl and sprinkle the instant vanilla pudding mix over the top. Stir until the pineapple and pudding are thoroughly combined and slightly thickened.
  3. Add the thawed whipped topping to the bowl and gently fold it into the pineapple-pudding mixture using a spatula, keeping the mixture light and fluffy.
  4. Fold in the mini marshmallows, shredded coconut, and chopped pecans or walnuts until the mix-ins are evenly distributed. Gently fold in the sliced maraschino cherries, if using.
  5. Cover the bowl tightly with plastic wrap or transfer the mixture to an airtight container and refrigerate for at least 2 hours, or until well chilled and set.
  6. Before serving, give the fluff a gentle stir, spoon it into a serving bowl or individual cups, and garnish with extra whipped topping, coconut, nuts, and maraschino cherries if desired. Serve cold.
