- 1 lb lean ground beef
- 1 cup fresh or store-bought gnocchi
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 1 cup low-sodium beef broth
- 2 cups mashed potatoes (homemade or store-bought)
- 1 cup grated sharp cheddar cheese
- Salt and pepper to taste
- 1 tsp thyme or rosemary (optional)
Instructions
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add onions and carrots; sauté until softened.
- Increase heat; add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in frozen peas, beef broth, salt, pepper, and herbs. Let simmer until thickened.
- If using store-bought mashed potatoes, warm them up. Spread half in a greased baking dish.
- Layer beef mixture over the potatoes, then top with remaining mashed potatoes. Smooth out if necessary.
- Preheat oven to 400°F (200°C), sprinkle cheese on top, and bake for 25-30 minutes until golden brown.
Notes
- This dish can be made in advance and stored in the fridge or freezer for easy reheating.
