- 1 lb ground chicken
- 3 cloves garlic, minced
- 1 small onion, finely grated
- 1/4 cup fresh parsley, finely chopped

- 1 tsp ground coriander

- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced

- 1 tbsp olive oil
- 1/4 tsp salt
- 1 tbsp fresh dill or parsley, chopped
Instructions
- Prepare the Kofta Mixture: In a large bowl, combine ground chicken, minced garlic, grated onion, parsley, cumin, coriander, paprika, salt, and black pepper. Mix gently with your hands until everything is evenly combined.
- Shape the Kofta: Take small portions of the mixture and shape them into short logs or oval patties. Traditionally, kofta is formed around skewers, but shaping them by hand works perfectly for home cooking. Place the shaped kofta on a plate and set aside.
- Cook the Kofta: Heat olive oil in a large skillet over medium heat. Add the kofta and cook for about 4–5 minutes on each side until browned and cooked through.
- Make the Garlic Yogurt Sauce: In a small bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and chopped herbs. Stir until smooth.
- Serve: Serve the warm Chicken Kofta with Garlic Yogurt Sauce drizzled over the top or on the side for dipping. They’re delicious tucked into warm flatbread, served over rice, or paired with fresh cucumbers, tomatoes, and lettuce.
