A delicious and creamy carrot ginger soup that is perfect for any occasion.
Ingredients

- 4 medium Carrots, peeled and diced
- 1 large Onion, diced
- 2 tablespoons Olive oil
- 2 inches Fresh ginger, peeled and grated
- 4 cups Vegetable broth
- 1 can Coconut milk
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
Instructions
- In a large pot, heat olive oil over medium-high heat, then add diced onion. Sauté until softened, about 4-5 minutes.
- Stir in grated ginger and cook until fragrant, about 1 minute.
- Add sliced carrots and vegetable broth. Bring to a simmer and cook until carrots are tender, about 20 minutes.
- Blend the mixture until smooth, then stir in coconut milk. Heat gently and adjust seasoning before serving.
Notes
- This soup can be served warm or chilled.
- Feel free to add other spices, such as cumin or coriander, for additional flavor.
