Description

A delicious and creamy carrot ginger soup that is perfect for any occasion.


Ingredients

  • 4 medium Carrots, peeled and diced
  • 1 large Onion, diced
  • 2 tablespoons Olive oil
  • 2 inches Fresh ginger, peeled and grated
  • 4 cups Vegetable broth
  • 1 can Coconut milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. In a large pot, heat olive oil over medium-high heat, then add diced onion. Sauté until softened, about 4-5 minutes.
  2. Stir in grated ginger and cook until fragrant, about 1 minute.
  3. Add sliced carrots and vegetable broth. Bring to a simmer and cook until carrots are tender, about 20 minutes.
  4. Blend the mixture until smooth, then stir in coconut milk. Heat gently and adjust seasoning before serving.
