A delicious and creamy Cajun penne pasta dish with smoked sausage.

- 8 oz penne pasta
- 1 lb smoked sausage, sliced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced

Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic; sauté until softened, about 5 minutes.
- Add sliced sausage to the skillet and cook until browned, about 5-7 minutes.
- Stir in Cajun seasoning and cook for 1 minute.
- Pour in heavy cream and bring to a simmer; cook for about 2 minutes until the sauce thickens.
- Reduce heat to low and stir in shredded cheddar cheese until melted and combined.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Season with salt and pepper to taste, then serve hot.
