- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup buffalo sauce
- 8 oz elbow macaroni (or pasta of choice)
- 2 cups shredded sharp cheddar cheese
- 4 oz cream cheese
- 1 cup whole milk
- 1 tsp garlic powder
- 2 green onions (for garnish)
- 2 tbsp unsalted butter
Instructions
- Preheat oven to 375°F (190°C). Season chicken with salt and pepper; cook in a skillet over medium heat until golden brown, about 5-7 minutes per side. Let cool, then shred.
- Boil salted water; cook pasta until al dente according to package instructions. Drain and set aside.
- In the same skillet, melt butter over medium heat; add garlic powder. Whisk in flour until smooth, then gradually stir in milk until thickened (about 5 minutes).
- Reduce heat to low; stir in cream cheese until melted, followed by cheddar until creamy.
- Combine pasta, shredded chicken, and buffalo sauce in the skillet; mix well.
- Transfer mixture to a greased baking dish; bake for 20 minutes or until bubbly and golden.
