Description

Delicious blueberry biscuits that are perfect for breakfast or a snack.


Ingredients

Scale
  • 1 stick unsalted butter (melted)
  • 2 1/2 cups all-purpose flour
  • 1/3 cup white granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries (could use frozen)
  • 2 cups buttermilk
  • 1/2 teaspoon vanilla
  • 1 cup powdered sugar
  • 3 tablespoons milk (more or less)

Instructions

  1. Melt butter in 9 x 9 or 8 x 8 baking dish.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and blueberries.
  3. Add buttermilk and stir with a spoon until dough comes together and makes a ball.
  4. Press biscuit dough into pan with melted butter.
  5. Cut into 9 squares with a knife.
  6. Bake in preheated 425 degree oven for 20 to 25 minutes until brown on top.
  7. Makes 9 biscuits.
  8. Can add glaze below or leave it off if you want.
  9. Combine and mix with a spoon until consistency you can drizzle over cooked and cooled biscuits.

Notes

  • These biscuits are delicious warm and can be served with butter or glaze.
  • Adjust the milk in the glaze to achieve your desired consistency.
