A hearty and flavorful gumbo made with chicken, sausage, and a variety of vegetables.

- 1 pound boneless skinless chicken thighs
- 1 pound andouille sausage
- 0 cup all-purpose flour
- 0 cup vegetable oil
- 1 large yellow onion
- 1 green bell pepper
- 2 celery stalks
- 4 garlic cloves
- 6 cups chicken stock
- 2 tablespoons Cajun seasoning
- 2 bay leaves
- 2 teaspoons Worcestershire sauce
- Salt to taste
- Black pepper to taste
- 0 cup chopped green onions
- 2 tablespoons chopped parsley
- Cooked white rice for serving
Instructions
- Combine flour and vegetable oil in a heavy pot. Stir over medium heat for 25–30 minutes until dark brown.
- Add chopped onion, bell pepper, and celery. Cook 5–7 minutes. Stir in minced garlic.
- Add sausage and chicken. Cook to brown slightly. Add Cajun seasoning, bay leaves, Worcestershire sauce, salt, and pepper.
- Slowly stir in chicken stock. Bring to a boil, then reduce heat and simmer for 45–60 minutes.
- Remove bay leaves. Serve gumbo over rice, garnished with green onions and parsley.
Notes
- Stir the roux continuously to avoid burning.
- Adjust the seasoning according to personal taste.
- Serve with crusty bread for a complete meal.
