Seasonal Ingredients

  • Fall Flavor: Incorporate pumpkin puree and spices like cinnamon and nutmeg into your chicken mixture for a unique fall-themed dish.

Cooking Tips and Notes

Creating the perfect dish of rotisserie chicken enchiladas takes a little finesse but ultimately leads to a reward that’s well worth the effort! Here are some friendly tips to guide you through the process:

Choosing Your Chicken

The centerpiece of your rotisserie chicken enchiladas is, of course, the chicken itself. Opt for a seasoned rotisserie chicken for added flavor. If you’re short on time, you can also use pre-cooked chicken from the deli section. Just make sure to shred it finely, allowing it to blend beautifully with the cheese and sauce.

Spice it Up

Feel free to customize the spice level of your enchiladas. Add chopped jalapeños or a sprinkle of cayenne in the filling for a kick. If you’re making this dish for friends or family who prefer milder flavors, stick to basic spices like cumin and garlic powder, which offer delicious taste without overwhelming heat.

Tortilla Tips

Using corn tortillas? Warm them briefly in a skillet before filling; this makes them pliable and helps prevent tearing. For a richer flavor, lightly pan-fry them in a little oil—trust me, it’s a game changer!

Cheese Choices

While shredded cheddar is classic, try blending different cheeses like Monterey Jack or even pepper jack for variety. The melty goodness enhances your rotisserie chicken enchiladas, making them irresistibly creamy.

Assemble with Care

Don’t overfill your tortillas. About ¼ cup of filling should be just right. This ensures they roll up neatly and avoid any leakage when baking in the sauce.

By following these tips, you’ll elevate your rotisserie chicken enchiladas to the next level, impressing those lucky enough to share in your homemade creation!

Description

Delicious enchilada chicken roll-ups made with shredded rotisserie chicken, creamy cheese, and enchilada sauce.

Ingredients

Scale
  • 1 whole rotisserie chicken (bones removed, shredded, or about 3 cups of leftover chicken)
  • 24 oz enchilada sauce
  • 4 oz diced chiles
  • 8 oz cheddar cheese
  • 8 oz cream cheese
  • 810 medium tortillas (flour or corn)

Instructions

  1. Preheat oven to 375 degrees F. Pour 1/3 of your can of enchilada sauce into the bottom to coat.
  2. Put rotisserie chicken into a gallon freezer bag, seal and press with your fingers to loosen bones. Or use a knife to remove meat from bones and shred or chop into large bite size pieces.
  3. In a bowl put your block of cream cheese and microwave for 40 seconds to soften it. Combine with diced chicken and chiles, fold together so everything is coated nicely.
  4. Lay 1-2 medium (taco size) tortillas down and fill the middle. Roll up so it closes, flip over and put into pan with sauce with the seam side down so it doesn’t unravel.
  5. Pan should fit 8 snuggly from one end to the other, could fit one on the side if you move them all to one side.
  6. Sprinkle half your cheese on top. Pour remaining sauce over the top so every bit is wet with it. Then sprinkle on remaining shredded cheese on top.
  7. Bake at 375 F for 20 minutes, then increase temp to 425 F for 4-5 minutes to brown the top.
  8. Enjoy warm with sour cream and/or a dollop of guacamole on the top.
